Quick answer · as of October 2026

Ikan tunu is whole fish grilled over hot coals and brushed with a paste of chilli, garlic, turmeric and oil. With katupa rice parcels and chilli pickle it is, according to a 2020 ACIAR cookbook, the most common meal to buy when travelling along Timor-Leste's coastal roads. In Dili, stalls on the waterfront grill fish every evening.

What is Ikan tunu?

Tunu means grill or roast in Tetum, and ikan tunu is the simplest and most common way to eat fish in Timor-Leste. Stalls sell whatever the boats brought in: fusiliers, small mackerels, mackerel scads, unicornfish and surgeonfish are all common, and sardines and halfbeaks in some places.

The classic combination is ikan tunu ho katupa: the fish, a few palm-leaf parcels of rice and a spoon of ai-manas chilli pickle. Along the north coast road, stalls sell it ready to eat, and in Dili the evening fish stalls on the waterfront let you choose a fish from the ice and eat by the sea.

How it is made

  1. The fish is scaled, gutted and scored so it cooks quickly, then salted.
  2. Chillies, garlic and turmeric are crushed to a paste and mixed with pepper and oil.
  3. The fish grills on a rack over coals and is brushed with the seasoning oil near the end.
  4. It is served with katupa and ai-manas.
